The Dinner I Almost Gave Up On

I am not a natural cook, and I want to say that up front, because I think people assume if you post about dinner, you’ve got it figured out. I don’t. Some nights I’m genuinely proud of what comes out of my kitchen. Other nights I’m ordering a pizza and pretending the smoke alarm never happened. This is a story about the second kind of night — and how it eventually, stubbornly, turned into the first.
Attempt One (And Two, And Three)
I’d seen a version of this lemon butter pasta everywhere — the kind of recipe that looks effortless in a fifteen-second video and takes forty-five real minutes to ruin. My first attempt broke into a greasy, separated mess. My second attempt was better, but I dumped in so much garlic that my roommate opened a window without saying a word, which honestly was fair. By the third try, I almost didn’t bother. It felt silly to keep losing to pasta.
What Actually Fixed It
The thing that finally worked wasn’t a better recipe. It was slowing down — pulling the pan off the heat before adding the butter, tasting as I went instead of trusting the clock, and accepting that “a pinch” is not a measurement I’m capable of eyeballing. It sounds small, but it changed how I cook other things too. I stopped treating dinner like a test I could fail and started treating it like something I was allowed to mess up and try again.
